Recipe: Jollof Rice
Ingredients:
- 2 cups of long grain rice
- 1 can of tomato paste
- 1 onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 3 cloves of garlic, minced
- 2 teaspoons of curry powder
- 1 teaspoon of thyme
- 1 teaspoon of paprika
- 1 teaspoon of cayenne pepper
- 3 cups of chicken or vegetable broth
- Salt and pepper to taste
- 1/4 cup of vegetable oil
Instructions:
1. Rinse the rice under cold water until the water runs clear. Drain and set aside.
2. In a large pot, heat the vegetable oil over medium heat. Add the diced onions and cook until translucent.
3. Add the diced bell peppers and minced garlic to the pot. Cook for a few minutes until the vegetables are softened.
4. Stir in the tomato paste, curry powder, thyme, paprika, cayenne pepper, salt, and pepper. Cook for another 5 minutes to allow the flavors to meld together.
5. Add the rinsed rice to the pot and stir to coat the rice with the tomato mixture.
6. Pour in the chicken or vegetable broth and bring to a boil. Reduce the heat to low, cover the pot, and let the rice simmer for about 20-25 minutes, or until the rice is cooked through and the liquid is absorbed.
7. Once the rice is cooked, fluff it with a fork and serve hot.
