Kale and Ground Beef Pasta

Ingredients:

- 8 ounces of your favorite pasta
- 2 tablespoons olive oil
- 1 pound ground beef
- 2 cloves garlic, minced
- 1 purple onion, diced
- 2 cups kale, chopped
- 2 eggs, lightly beaten
- Salt and pepper, to taste

Instructions:

1. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions. Drain and set aside.

2. Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, about 5 minutes. Add the garlic and onion and cook until softened, about 3 minutes.

3. Add the kale and cook until wilted, about 2 minutes.

4. Reduce the heat to low and add the eggs. Stir to combine and cook until the eggs are cooked through, about 2 minutes.

5. Add the cooked pasta to the skillet and stir to combine. Season with salt and pepper to taste.

6. Serve the kale and ground beef pasta warm. Enjoy!
