Kale and Spinach Egg Bake

Ingredients:

- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 large tomato, diced
- 2 cups kale, chopped
- 2 cups spinach, chopped
- 6 eggs
- Salt and pepper, to taste

Instructions:

1. Preheat oven to 350°F.

2. Heat olive oil in a large skillet over medium heat. Add onion and garlic and cook until softened, about 5 minutes.

3. Add tomato and cook until softened, about 3 minutes.

4. Add kale and spinach and cook until wilted, about 3 minutes.

5. Transfer the mixture to a 9-inch baking dish.

6. In a medium bowl, whisk together eggs, salt, and pepper.

7. Pour egg mixture over the vegetables in the baking dish.

8. Bake for 25 minutes, or until eggs are set.

9. Serve warm. Enjoy!
