Kale and Spinach Meatball Bowl

Ingredients:

-1 lb ground beef
-1/2 cup cooked rice
-1/2 cup cooked pasta
-1/4 cup diced shallots
-2 cups kale, chopped
-2 cups spinach, chopped
-1/2 teaspoon pepper
-1 teaspoon salt
-1 teaspoon onion powder
-1 teaspoon garlic, minced
-2 tablespoons soy sauce
-1/2 cup cooked meatballs

Instructions:

1. Preheat oven to 350°F.

2. In a large bowl, combine the ground beef, shallots, kale, spinach, pepper, salt, onion powder, garlic, and soy sauce. Mix until all ingredients are evenly distributed.

3. Form the mixture into small meatballs and place on a greased baking sheet.

4. Bake in preheated oven for 15 minutes.

5. Meanwhile, cook the rice and pasta according to package instructions.

6. In a large bowl, combine the cooked rice, pasta, and cooked meatballs.

7. In a separate bowl, whisk together the eggs.

8. Pour the egg mixture over the rice, pasta, and meatballs and mix until everything is evenly coated.

9. Serve warm. Enjoy!
