Kale and Walnut Rice Bowl

Ingredients:

- 1 cup uncooked white rice
- 1 cup kale, chopped
- 1 tomato, diced
- 1/2 cup walnuts, chopped
- 1/2 avocado, diced
- 2 tablespoons cilantro, chopped
- 1 potato, diced
- 1/2 onion, diced
- 2 tablespoons olive oil
- Salt and pepper, to taste

Instructions:

1. Preheat oven to 375 degrees F.

2. In a medium bowl, combine the diced potato, onion, and olive oil. Season with salt and pepper, to taste. Spread the mixture onto a baking sheet and bake in preheated oven for 15-20 minutes, or until potatoes are tender.

3. Meanwhile, cook the rice according to package directions.

4. In a large bowl, combine the cooked rice, kale, tomato, walnuts, avocado, cilantro, and roasted potatoes.

5. Serve warm, topped with additional cilantro, if desired. Enjoy!
