Kale, Quinoa, and Roasted Vegetable Bowl
Ingredients:
-1 cup cooked quinoa
-1 cup diced sweet potato
-1 cup sliced radish
-1 cup diced carrots
-1 cup chopped kale
-1 avocado, diced
-2 tablespoons olive oil
-Salt and pepper to taste
Instructions:
1. Preheat oven to 400°F.
2. Line a baking sheet with parchment paper and spread the sweet potatoes, radishes, and carrots on the sheet.
3. Drizzle with olive oil and season with salt and pepper.
4. Roast in the oven for 20 minutes, stirring halfway through.
5. Meanwhile, cook the quinoa according to package instructions.
6. In a large bowl, combine the cooked quinoa, roasted vegetables, and kale.
7. Top with diced avocado and serve.
