Recipe: Кенгуру в соусе

Ingredients:
- 500g kangaroo meat, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 red bell pepper, sliced
- 1 can of diced tomatoes
- 1 cup beef broth
- 2 tbsp tomato paste
- 1 tsp paprika
- Salt and pepper to taste
- Olive oil for cooking

Instructions:
1. Heat some olive oil in a large skillet over medium heat.
2. Add the diced kangaroo meat and cook until browned on all sides. Remove from the skillet and set aside.
3. In the same skillet, add a bit more olive oil if needed and sauté the chopped onion and minced garlic until fragrant.
4. Add the sliced red bell pepper and cook for a few minutes until slightly softened.
5. Stir in the diced tomatoes, beef broth, tomato paste, paprika, salt, and pepper. Mix well.
6. Return the cooked kangaroo meat to the skillet and stir to combine with the sauce.
7. Reduce the heat to low, cover the skillet, and let the dish simmer for about 30 minutes, stirring occasionally.
8. Taste and adjust seasoning if needed.
9. Serve the kangaroo in sauce hot, garnished with fresh herbs if desired.
