Kilbasa and Spinach Chicken Parmesan

Ingredients:

2 boneless, skinless chicken breasts
2 eggs
Salt and pepper, to taste
1/4 cup grated parmesan
1 tomato, diced
1 teaspoon paprika
1/4 cup all-purpose flour
1/4 cup almond milk
1/4 cup coconut cream
1 tablespoon fish sauce
1 tablespoon oyster sauce
1 tablespoon soy sauce
1 tablespoon truffle vinaigrette
2 cups fresh spinach
1/2 cup diced kilbasa
1 lemon, juiced

Instructions:

1. Preheat oven to 375°F.

2. In a shallow bowl, whisk together eggs, salt, pepper, and almond milk.

3. In a separate shallow bowl, mix together parmesan, paprika, and flour.

4. Dip each chicken breast in the egg mixture, then coat in the parmesan mixture.

5. Place chicken breasts in a greased baking dish.

6. In a medium bowl, mix together tomato, coconut cream, fish sauce, oyster sauce, soy sauce, truffle vinaigrette, spinach, and kilbasa.

7. Spread the mixture over the chicken breasts.

8. Squeeze the juice of one lemon over the top.

9. Bake for 25-30 minutes, or until chicken is cooked through and the top is golden brown.

10. Serve and enjoy!
