Kohlrabi and Brussels Sprouts Fried Rice
Ingredients:
- 2 cups cooked rice
- 1 kohlrabi, peeled and diced
- 1 cup Brussels sprouts, sliced
- 1 onion, diced
- 2 spring onions, diced
- 2 cups fresh spinach, chopped
- 2 carrots, peeled and diced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the onion, kohlrabi, Brussels sprouts, and carrots to the skillet and cook for 5 minutes, stirring occasionally.
3. Add the cooked rice and spring onions to the skillet and cook for an additional 5 minutes, stirring occasionally.
4. Add the fresh spinach and cook for an additional 2 minutes, stirring occasionally.
5. Season with salt and pepper to taste.
6. Serve hot. Enjoy!
