Recipe: Korean Inspired Vegetarian Poutine

Ingredients:
- 4 large potatoes, washed and cut into fries
- 2 tablespoons vegetable oil
- 1 cup kimchi, chopped
- 1 cup shredded mozzarella cheese
- 1/4 cup gochujang sauce
- 2 green onions, thinly sliced
- Salt and pepper to taste

Instructions:
1. Preheat the oven to 425°F (220°C).
2. Toss the potato fries with vegetable oil, salt, and pepper. Spread them out on a baking sheet in a single layer and bake for 30-35 minutes, or until crispy and golden brown.
3. While the fries are baking, heat the kimchi in a pan over medium heat until it is heated through.
4. Once the fries are done, remove them from the oven and place them in a serving dish.
5. Sprinkle the shredded mozzarella cheese over the hot fries so it melts slightly.
6. Drizzle the gochujang sauce over the cheese and fries.
7. Top with the heated kimchi and sliced green onions.
