Korean Spicy Chicken Meatballs

Ingredients:

-1 lb ground chicken
-1/2 cup panko breadcrumbs
-1/4 cup finely chopped onion
-1/4 cup finely chopped bell pepper
-1/4 cup finely chopped scallions
-2 cloves garlic, minced
-2 tablespoons gochujang (Korean chili paste)
-1 tablespoon soy sauce
-1 teaspoon sesame oil
-1 teaspoon freshly grated ginger
-1/2 teaspoon black pepper
-1/4 teaspoon salt
-1 egg

Instructions:

1. Preheat oven to 375 degrees F.

2. In a large bowl, combine the ground chicken, panko breadcrumbs, onion, bell pepper, scallions, garlic, gochujang, soy sauce, sesame oil, ginger, black pepper, salt, and egg.

3. Mix all ingredients together until well combined.

4. Using your hands, form the mixture into small meatballs, about 1-inch in diameter.

5. Place the meatballs on a baking sheet lined with parchment paper.

6. Bake for 20-25 minutes, or until the meatballs are cooked through.

7. Serve warm with your favorite dipping sauce. Enjoy!
