Korean-Style Pig Feet Stew
Ingredients:
• 2 pig feet, cut into 2-inch pieces
• 1/2 cup tripe, cut into 1-inch pieces
• 1/4 cup cod liver, cut into 1-inch pieces
• 1 onion, diced
• 1/2 head of cabbage, cut into 1-inch pieces
• 1/2 cup kimchi
• 2 tablespoons olive oil
• 2 tablespoons mayonnaise
• 2 tablespoons lemon juice
• 1/2 cup cheerios
Instructions:
1. In a large pot, heat the olive oil over medium-high heat.
2. Add the onion and cook until softened, about 5 minutes.
3. Add the pig feet and tripe and cook until lightly browned, about 5 minutes.
4. Add the cod liver, cabbage, kimchi, mayonnaise, and lemon juice and stir to combine.
5. Reduce the heat to low and simmer for 30 minutes, stirring occasionally.
6. Add the cheerios and stir to combine.
7. Simmer for an additional 10 minutes, stirring occasionally.
8. Serve hot. Enjoy!
