Lamb and Carrot Stir Fry
Ingredients:
-1 lb. ground lamb
-2 carrots, peeled and diced
-2 tablespoons olive oil
-1 teaspoon black pepper
-2 eggs, lightly beaten
-1/4 cup soy sauce
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the ground lamb and cook until it is no longer pink, about 5 minutes.
3. Add the diced carrots and black pepper and cook for an additional 3 minutes.
4. Push the lamb and carrots to the side of the skillet and pour the eggs into the center. Scramble the eggs until they are cooked through.
5. Add the soy sauce and stir to combine.
6. Cook for an additional 2 minutes or until the carrots are tender.
7. Serve hot. Enjoy!
