Lamb and Mushroom Frittata
Ingredients:
- 4 eggs
- 2 tablespoons of olive oil
- 1/2 cup of diced mushrooms
- 1/4 cup of diced onion
- 1/4 cup of diced bell pepper
- 1/4 cup of diced garlic
- 1/2 cup of cooked and crumbled lamb
- 1/2 cup of shredded cheese
- Salt and pepper to taste
Instructions:
1. Preheat oven to 350 degrees F.
2. Heat olive oil in a large skillet over medium heat.
3. Add mushrooms, onion, bell pepper, and garlic and cook until vegetables are softened, about 5 minutes.
4. Add cooked and crumbled lamb and cook for an additional 2 minutes.
5. In a medium bowl, whisk together eggs, salt, and pepper.
6. Add egg mixture to the skillet and stir to combine.
7. Sprinkle cheese over the top of the mixture.
8. Transfer skillet to preheated oven and bake for 15 minutes, or until eggs are set.
9. Remove from oven and let cool for 5 minutes before serving. Enjoy!
