Lamb and Rice Pilaf
Ingredients:
- 2 cups of long grain white rice
- 1 lb of ground lamb
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- 2 cups of chicken broth
- 1 teaspoon of ground cumin
- 1 teaspoon of paprika
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the ground lamb and cook until it is browned, about 5 minutes.
3. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
4. Add the rice, cumin, paprika, salt and pepper and stir to combine.
5. Pour in the chicken broth and bring to a boil.
6. Reduce the heat to low, cover and simmer for 20 minutes, or until the rice is cooked through.
7. Fluff the rice with a fork and serve.
