Lamb and Rice Pilaf
Ingredients:
- 1 lb mince lamb
- 2 eggs
- 2 cups white rice
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tomato, diced
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper
- 1 teaspoon salt
Instructions:
1. Preheat oven to 350°F.
2. In a large skillet, cook mince lamb over medium-high heat until browned, about 5 minutes.
3. Add onion, garlic, tomato, black pepper, red pepper, and salt. Cook for an additional 5 minutes.
4. In a large bowl, whisk together eggs and rice.
5. Add cooked lamb mixture to the bowl and stir to combine.
6. Transfer the mixture to a greased 9x13 inch baking dish.
7. Cover with foil and bake for 25 minutes.
8. Remove from the oven and let cool for 10 minutes before serving. Enjoy!
