Lamb and Rice Pilaf with Yogurt and Nuts
Ingredients:
-1 lb ground lamb
-1 cup uncooked white rice
-1 cup plain yogurt
-1/2 cup chopped nuts (almonds, walnuts, or cashews)
-1 onion, diced
-2 cloves garlic, minced
-1 teaspoon ground cumin
-1 teaspoon ground coriander
-1 teaspoon ground turmeric
-1 teaspoon paprika
-1 teaspoon salt
-1/2 teaspoon black pepper
-2 tablespoons olive oil
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat. Add the ground lamb and cook until browned, about 5 minutes.
2. Add the diced onion and garlic and cook for another 3 minutes.
3. Add the rice, cumin, coriander, turmeric, paprika, salt, and pepper. Stir to combine and cook for another 2 minutes.
4. Add 2 cups of water and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes.
5. Remove the lid and stir in the yogurt and nuts. Cover and cook for another 5 minutes.
6. Serve hot. Enjoy!
