Langostine Paella
Ingredients:
-1 lb. langostines
-4 cloves garlic, minced
-1/2 cup white wine
-2 cups long-grain white rice
-1/4 teaspoon saffron threads
-1 teaspoon salt
-1/2 teaspoon freshly ground black pepper
-1/2 teaspoon paprika
-2 shallots, minced
-1 cup frozen peas
-1 large tomato, diced
-1 bell pepper, diced
-4 tablespoons butter
Instructions:
1. Heat a large skillet over medium-high heat. Add the langostines and garlic and cook until the langostines are just cooked through, about 5 minutes. Remove the langostines from the skillet and set aside.
2. Add the white wine to the skillet and bring to a simmer. Add the rice, saffron, salt, pepper, and paprika and stir to combine.
3. Add the shallots, peas, tomato, and bell pepper and stir to combine.
4. Reduce the heat to low and cover the skillet. Simmer for 20 minutes, stirring occasionally.
5. Add the butter and stir to combine. Add the langostines back to the skillet and stir to combine.
6. Cover the skillet and simmer for an additional 10 minutes, or until the rice is cooked through.
7. Serve the paella hot. Enjoy!
