Lemon Butter Chicken and Rice
Ingredients:
-2 boneless, skinless chicken breasts
-2 tablespoons butter
-1 lemon, juiced
-1 cup uncooked white rice
-2 cups chicken broth
-Salt and pepper, to taste
Instructions:
1. Preheat oven to 350 degrees F.
2. Place chicken breasts in a baking dish.
3. In a small saucepan, melt butter over low heat. Add lemon juice and stir to combine.
4. Pour butter and lemon mixture over chicken breasts and season with salt and pepper.
5. Bake in preheated oven for 25 minutes, or until chicken is cooked through.
6. Meanwhile, in a medium saucepan, bring chicken broth to a boil. Add rice and stir. Reduce heat to low, cover, and simmer for 15 minutes, or until rice is cooked.
7. Serve chicken breasts over cooked rice and enjoy!
