Lemon-Caper Cod over Rice

Ingredients:

- 2 cups cooked white rice

- 2 cod fillets
- 2 tablespoons capers
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions:

1. Preheat oven to 375 degrees F.

2. Place cod fillets on a baking sheet lined with parchment paper.

3. Drizzle olive oil over the cod fillets and season with salt and pepper.

4. Bake in preheated oven for 15 minutes.

5. Meanwhile, in a small bowl, combine capers, lemon juice, and a pinch of salt and pepper.

6. When cod is finished baking, remove from oven and top with caper-lemon mixture.

7. Serve cod over cooked white rice. Enjoy!
