Make Lemon Chicken Tagliatelles
Lemon Chicken Tagliatelles
Ingredients:
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons freshly squeezed lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 8 ounces tagliatelles
- 2 cups sliced mushrooms
- 1 cup diced tomatoes
- 1/2 cup grated Parmesan cheese
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat. Add the garlic and chicken pieces and cook until the chicken is cooked through, about 5 minutes.
2. Add the lemon juice, salt, and pepper and cook for another minute.
3. Meanwhile, bring a large pot of salted water to a boil and cook the tagliatelles according to package instructions.
4. Add the mushrooms and tomatoes to the chicken and cook for another 3 minutes.
5. Drain the tagliatelles and add them to the skillet with the chicken and vegetables. Stir in the Parmesan cheese.
6. Serve the tagliatelles with a side of salad. Enjoy!
