Recipe Name: Lemon Chicken with Avocado Rice

Ingredients:
- 2 chicken breasts
- 1 cup of rice
- 2 potatoes, diced
- 2 tomatoes, diced
- 1 onion, chopped
- 1 avocado, sliced
- 1 lemon, juiced
- Salt and pepper to taste
- Olive oil

Instructions:
1. Season the chicken breasts with salt, pepper, and a squeeze of lemon juice. Let it marinate for 15 minutes.
2. In a large skillet, heat some olive oil over medium heat. Add the chicken breasts and cook until browned on both sides and cooked through. Remove from the skillet and set aside.
3. In the same skillet, add a bit more olive oil if needed. Add the diced potatoes and cook until they start to soften.
4. Add the chopped onion and diced tomatoes to the skillet. Cook until the vegetables are tender.
5. Meanwhile, cook the rice according to package instructions.
6. Once the vegetables are cooked, add the cooked rice to the skillet and mix everything together.
7. Slice the cooked chicken breasts and arrange them on top of the rice and vegetable mixture.
8. Top the dish with sliced avocado and drizzle with the remaining lemon juice.
9. Serve the lemon chicken with avocado rice hot and enjoy!
