Lemon Chicken with Capers
Ingredients:
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 tablespoons capers
- Juice of 1 lemon
- Salt and pepper to taste
Instructions:
1. Preheat oven to 375°F.
2. Heat olive oil in a large skillet over medium-high heat.
3. Add chicken breasts and cook for 4-5 minutes per side, or until golden brown.
4. Transfer chicken to a baking dish.
5. In the same skillet, add garlic and capers and cook for 1-2 minutes, stirring frequently.
6. Add lemon juice and stir to combine.
7. Pour the lemon mixture over the chicken breasts.
8. Bake in preheated oven for 15-20 minutes, or until chicken is cooked through.
9. Serve warm with a sprinkle of salt and pepper. Enjoy!
