Lemon Cream Pasta with Courgette

Ingredients:

- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup uncooked rice
- 2 cups uncooked pasta
- 1 courgette, diced
- 1/2 cup heavy cream
- Juice of 1 lemon
- 2 tablespoons tomato paste

Instructions:

1. Heat the olive oil in a large skillet over medium heat.

2. Add the onion and garlic and cook until softened, about 5 minutes.

3. Add the rice and cook for an additional 3 minutes.

4. Add the pasta and courgette and cook for an additional 5 minutes.

5. Add the cream, lemon juice, and tomato paste and stir to combine.

6. Reduce the heat to low and simmer for 10 minutes, stirring occasionally.

7. Serve hot. Enjoy!
