Lemon-Cucumber Fish and Rice
Ingredients:
-1 pound of white fish fillets
-2 cups of cooked white rice
-1 cucumber, diced
-1 lemon, juiced
-2 tablespoons of olive oil
-Salt and pepper, to taste
Instructions:
1. Preheat oven to 375 degrees Fahrenheit.
2. Place fish fillets in a baking dish.
3. Drizzle olive oil over the fish and season with salt and pepper.
4. Squeeze the juice of the lemon over the fish.
5. Bake in preheated oven for 15-20 minutes, or until fish is cooked through.
6. Meanwhile, in a large bowl, combine cooked rice, diced cucumber, and lemon juice.
7. Mix until ingredients are evenly distributed.
8. Serve fish with lemon-cucumber rice. Enjoy!
