Lemon-Feta Salmon with Jasmine Rice
Ingredients:
-4 salmon fillets
-2 cups jasmine rice
-1 pint cherry tomatoes, halved
-1/2 cup feta cheese, crumbled
-1 lemon, sliced
-Salt and pepper to taste
Instructions:
1. Preheat oven to 375 degrees F.
2. Place salmon fillets in a baking dish. Top with lemon slices. Sprinkle with salt and pepper.
3. Bake in preheated oven for 15 minutes.
4. Meanwhile, cook jasmine rice according to package instructions.
5. When salmon is cooked through, remove from oven and top with feta cheese and cherry tomatoes.
6. Serve salmon with jasmine rice. Enjoy!
