Lemon Garlic Chicken and Potatoes

Ingredients:

- 4 boneless, skinless chicken breasts
- 1 can of diced tomatoes
- 2 cloves of garlic, minced
- 2 tablespoons of butter
- 2 large potatoes, peeled and cubed
- 2 tablespoons of fresh basil, chopped
- Juice of 1 lemon
- Salt and pepper to taste

Instructions:

1. Preheat oven to 375 degrees F.

2. Place chicken breasts in a baking dish.

3. In a small bowl, combine the diced tomatoes, garlic, butter, potatoes, basil, lemon juice, salt, and pepper. Mix until everything is combined.

4. Pour the tomato mixture over the chicken breasts.

5. Bake in preheated oven for 25-30 minutes, or until chicken is cooked through and potatoes are tender.

6. Serve and enjoy!
