Lemon Garlic Chicken and Rice

Ingredients:

- 2 cups of uncooked white rice

- 2 chicken breasts, cut into cubes
- 4 cloves of garlic, minced
- 1 lemon, juiced
- 2 cups of vegetable broth

Instructions:

1. In a large pot, heat 1 tablespoon of olive oil over medium-high heat.

2. Add the chicken cubes and cook until lightly browned, about 5 minutes.

3. Add the garlic and cook for another minute.

4. Add the rice, lemon juice, and vegetable broth. Stir to combine.

5. Bring the mixture to a boil, then reduce the heat to low and cover.

6. Simmer for 20 minutes, or until the rice is cooked through.

7. Serve hot and enjoy!
