Lemon Garlic Fish and Rice Bowl

Ingredients:

- 2 cups cooked white rice
- 2 cups cooked pasta
- 2 carrots, peeled and diced
- 2 fillets of white fish
- 2 tablespoons of soya sauce
- 1 cup of frozen peas
- Juice of 1 lemon
- 1 block of tofu, cubed
- 2 cloves of garlic, minced
- 2 cups of fresh spinach

Instructions:

1. Preheat oven to 375°F.

2. Place the fish fillets on a baking sheet lined with parchment paper. Squeeze the juice of the lemon over the fish and sprinkle with salt and pepper. Bake in preheated oven for 15 minutes.

3. Meanwhile, heat a large skillet over medium-high heat and add the soya sauce, carrots, peas, garlic, and tofu. Cook for 5 minutes, stirring occasionally.

4. Add the cooked rice and pasta to the skillet and stir to combine. Cook for an additional 5 minutes.

5. Add the spinach and cook for 2 minutes, or until wilted.

6. Serve the fish and vegetables over the cooked rice and pasta. Enjoy!
