Lemon Garlic Rice Bowl with Meat
Ingredients:
-1 lb of ground meat
-2 cups of uncooked white rice
-1 can of garbanzo beans
-1/4 cup of olive oil
-3 cloves of garlic, minced
-1/4 cup of lemon juice
-1 teaspoon of dried oregano
-Salt and pepper to taste
Instructions:
1. In a large skillet over medium-high heat, cook the ground meat until it is no longer pink. Drain any excess fat and set aside.
2. In a medium saucepan, bring 2 cups of water to a boil. Add the rice and reduce the heat to low. Simmer for 15 minutes or until the rice is cooked through.
3. Meanwhile, in a small saucepan, heat the olive oil over medium heat. Add the garlic and cook for 1 minute. Add the garbanzo beans and cook for an additional 2 minutes.
4. Add the cooked ground meat to the garbanzo beans and stir to combine. Add the lemon juice and oregano and season with salt and pepper to taste. Simmer for 5 minutes.
5. To assemble the bowls, divide the cooked rice among 4 bowls. Top each bowl with the lemon garlic meat and garbanzo bean mixture. Serve warm. Enjoy!
