Make Lemon Garlic Roasted Chicken
Recipe Name: Lemon Garlic Roasted Chicken
Ingredients:
- 1 whole chicken (approximately 4-5 pounds)
- 4 cloves of garlic, minced
- 2 lemons, juiced and zested
- 2 tablespoons of olive oil
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 teaspoon of dried thyme
- 1 teaspoon of dried rosemary
Step-by-Step Guide:
1. Preheat your oven to 425°F (220°C).
2. Rinse the chicken thoroughly under cold water and pat it dry with paper towels.
3. In a small bowl, combine the minced garlic, lemon zest, lemon juice, olive oil, salt, black pepper, dried thyme, and dried rosemary. Mix well to create a marinade.
4. Place the chicken in a roasting pan or a baking dish, breast side up.
5. Carefully loosen the skin of the chicken by gently sliding your fingers between the skin and the meat. Be careful not to tear the skin.
6. Spoon the marinade mixture under the skin, spreading it evenly over the chicken breast and thighs. Massage the chicken to ensure the marinade is well-distributed.
7. Drizzle a little olive oil over the chicken skin and rub it in to help crisp up the skin during roasting.
8. Place the chicken in the preheated oven and roast for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.
9. Every 20 minutes, baste the chicken with the juices from the bottom of the pan to keep it moist and flavorful.
10. Once the chicken is cooked, remove it from the oven and let it rest for about 10 minutes before carving.
11. Carve the chicken into desired pieces and serve with roasted vegetables, mashed potatoes, or a fresh salad.
