Lemon-Garlic Salmon and Rice
Ingredients:
- 2 tablespoons olive oil
- 2 cups white rice
- 2 salmon fillets
- 2 cloves garlic, minced
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions:
1. Preheat oven to 375 degrees Fahrenheit.
2. Heat olive oil in a large skillet over medium-high heat.
3. Add the white rice and cook, stirring occasionally, until lightly browned, about 5 minutes.
4. Place the salmon fillets in the skillet and season with salt and pepper.
5. Cook for 3 minutes on each side, or until the salmon is cooked through.
6. Add the garlic and lemon juice to the skillet and stir to combine.
7. Transfer the skillet to the preheated oven and bake for 15 minutes.
8. Serve the salmon and rice hot. Enjoy!
