Lemon Ginger Chicken

Ingredients:

- 2 chicken breasts, cut into cubes
- 2 eggs
- 1 onion, diced
- 1 bell pepper, diced
- 1 teaspoon salt
- 1 tomato, diced
- 2 cloves garlic, minced
- 2 tablespoons coriander, chopped
- 1 teaspoon ginger, grated
- Juice of 1 lemon

Instructions:

1. In a medium bowl, whisk together the eggs.

2. Add the chicken cubes to the egg mixture and stir to coat.

3. Heat a large skillet over medium-high heat and add the chicken cubes. Cook for 5 minutes, stirring occasionally, until the chicken is cooked through.

4. Add the onion, bell pepper, salt, tomato, garlic, coriander, and ginger to the skillet. Cook for an additional 5 minutes, stirring occasionally, until the vegetables are softened.

5. Add the lemon juice and stir to combine.

6. Serve the chicken and vegetables over rice or with a side of your favorite vegetables. Enjoy!
