Lemon-Glazed Mackerel with Asparagus

Ingredients:
2 mackerel fillets
1 bunch of asparagus
1 lemon
2 tablespoons of olive oil
2 tablespoons of butter
Salt and pepper to taste

Instructions:

1. Preheat oven to 375 degrees F.

2. Place mackerel fillets on a baking sheet lined with parchment paper.

3. Cut the lemon in half and squeeze the juice over the mackerel fillets.

4. Drizzle olive oil over the mackerel fillets and season with salt and pepper.

5. Place the asparagus around the mackerel fillets.

6. Dot the asparagus with butter and season with salt and pepper.

7. Bake in preheated oven for 15-20 minutes, or until the mackerel is cooked through and the asparagus is tender.

8. Serve hot with a wedge of lemon. Enjoy!
