Recipe Name: Lemon Herb Roasted Chicken

Ingredients:
- 1 whole chicken (about 4-5 lbs)
- 2 lemons
- 4 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 tablespoon of fresh rosemary, chopped
- 1 tablespoon of fresh thyme, chopped
- Salt and pepper to taste

Instructions:
1. Preheat the oven to 400°F (200°C).
2. Rinse the chicken under cold water and pat it dry with paper towels.
3. In a small bowl, mix together the minced garlic, olive oil, chopped rosemary, chopped thyme, salt, and pepper.
4. Cut one lemon in half and squeeze the juice over the chicken. Place the squeezed lemon halves inside the cavity of the chicken.
5. Rub the garlic and herb mixture all over the chicken, making sure to coat it evenly.
6. Slice the remaining lemon into thin slices and place them on top of the chicken.
7. Place the chicken in a roasting pan and roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown.
8. Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
