Make Lemon Herb Roasted Chicken
Recipe Name: Lemon Herb Roasted Chicken
Ingredients:
- 1 whole chicken, about 4-5 lbs
- 2 lemons, sliced
- 4 cloves of garlic, minced
- 2 tablespoons of fresh rosemary, chopped
- 2 tablespoons of fresh thyme, chopped
- 1/4 cup of olive oil
- Salt and pepper to taste
Instructions:
1. Preheat the oven to 400°F (200°C).
2. Rinse the chicken inside and out, then pat dry with paper towels.
3. In a small bowl, mix together the minced garlic, chopped rosemary, chopped thyme, olive oil, salt, and pepper.
4. Gently loosen the skin of the chicken and rub the herb mixture under the skin and all over the chicken.
5. Place the sliced lemons inside the cavity of the chicken.
6. Tie the legs together with kitchen twine and tuck the wings under the body of the chicken.
7. Place the chicken in a roasting pan and roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).
8. Let the chicken rest for 10-15 minutes before carving.
