Lemon Pepper Chicken and Rice
Ingredients:
- 2 chicken thighs
- 2 tablespoons all-purpose flour
- 2 tablespoons olive oil
- 2 tablespoons corn oil
- 2 tablespoons lemon juice
- 2 tablespoons soy sauce
- 2 tablespoons lemon pepper
- 1 teaspoon paprika
- 1 teaspoon seasoning salt
- 1 teaspoon garlic powder
- 1 teaspoon garlic salt
- 1 teaspoon black pepper
- 2 potatoes, peeled and diced
- 1 can tuna, drained
- 1 cup uncooked white rice
- 2 cups beef broth
- 2 cups chicken broth
Instructions:
1. Preheat oven to 375°F.
2. In a shallow bowl, mix together the flour, paprika, seasoning salt, garlic powder, garlic salt, and black pepper.
3. Coat the chicken thighs in the flour mixture.
4. Heat the olive oil and corn oil in a large skillet over medium-high heat.
5. Add the chicken thighs to the skillet and cook for 5 minutes on each side, or until golden brown.
6. Transfer the chicken to a baking dish.
7. In a small bowl, mix together the lemon juice, soy sauce, and lemon pepper.
8. Pour the lemon juice mixture over the chicken thighs.
9. Add the potatoes to the baking dish.
10. Bake in the preheated oven for 25 minutes, or until the chicken is cooked through.
11. Meanwhile, in a medium saucepan, bring the beef broth and chicken broth to a boil.
12. Add the rice and tuna to the boiling broth.
13. Reduce heat to low and simmer for 20 minutes, or until the rice is cooked through.
14. Serve the chicken and potatoes with the rice and tuna. Enjoy!
