Lemon Pork and Potato Skillet

Ingredients:

- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 pound pork tenderloin, cut into 1-inch cubes
- 2 large potatoes, peeled and cut into 1-inch cubes
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chicken broth
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons chopped fresh parsley

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the garlic and pork cubes and cook until the pork is lightly browned, about 5 minutes.

3. Add the potatoes, salt, and pepper and cook for an additional 5 minutes.

4. Pour in the chicken broth and lemon juice and bring to a simmer.

5. Reduce the heat to low and simmer for 15 minutes, stirring occasionally, until the potatoes are tender.

6. Add the parsley and stir to combine.

7. Serve hot. Enjoy!
