Lemon Quinoa
Ingredients:
-1 cup quinoa
-1 tablespoon vegetable oil
-2 cups water
-1 teaspoon oregano
-1 teaspoon dried thyme
-1 teaspoon dried rosemary
-2 tablespoons chopped parsley
-2 tablespoons fresh lemon juice
-1 teaspoon grated fresh lemon rind
-Salt and pepper to taste
Instructions:
1. In a medium saucepan, heat the vegetable oil over medium heat.
2. Add the quinoa and toast for 2-3 minutes, stirring constantly.
3. Add the water, oregano, thyme, rosemary, parsley, lemon juice, and lemon rind.
4. Bring the mixture to a boil, then reduce the heat to low and simmer for 15-20 minutes, or until the quinoa is cooked through.
5. Remove from the heat and season with salt and pepper to taste.
6. Serve warm. Enjoy!
