Lemon Quinoa Rice Pilaf

Ingredients:

- 2 tablespoons butter
- 1/2 onion, diced
- 2 cups cooked white rice
- 1 cup cooked quinoa
- 1/2 cup green beans, cut into 1/2 inch pieces
- 1/4 cup fresh lemon juice
- 2 eggs, lightly beaten
- Salt and pepper, to taste

Instructions:

1. Heat the butter in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.

2. Add the cooked rice and quinoa to the skillet and stir to combine.

3. Add the green beans, lemon juice, and eggs to the skillet and stir to combine.

4. Cook, stirring occasionally, until the eggs are cooked through and the vegetables are tender, about 8 minutes.

5. Season with salt and pepper, to taste.

6. Serve warm. Enjoy!
