Lemon Quinoa Rice with Green Beans
Ingredients:
- 2 tablespoons butter
- 1 small onion, diced
- 2 cups cooked quinoa
- 2 cups cooked white rice
- 1 cup cooked green beans
- 2 eggs, lightly beaten
- Juice of 1 lemon
Instructions:
1. Heat the butter in a large skillet over medium heat.
2. Add the onion and cook until softened, about 5 minutes.
3. Add the quinoa and rice and cook, stirring occasionally, until heated through, about 5 minutes.
4. Add the green beans and cook for an additional 2 minutes.
5. Reduce the heat to low and pour in the eggs. Stir constantly until the eggs are cooked through, about 2 minutes.
6. Add the lemon juice and stir to combine.
7. Serve warm. Enjoy!
