Lemon Rice
Ingredients:
- 1 cup of uncooked rice
- 1 tomato, diced
- 1 carrot, diced
- 1 onion, diced
- Juice of 1 lemon
Instructions:
1. Cook the rice according to package instructions.
2. In a large skillet, heat a tablespoon of oil over medium heat. Add the diced onion, carrot, and tomato and cook until the vegetables are softened, about 5 minutes.
3. Add the cooked rice to the skillet and stir to combine.
4. Squeeze the juice of one lemon over the rice and vegetables and stir to combine.
5. Cook for an additional 5 minutes, stirring occasionally.
6. Serve warm. Enjoy!
