Lemon Tahini Cauliflower Quinoa
Ingredients:
-1 head of cauliflower, cut into florets
-1 cup of quinoa
-1/4 cup of tahini
-1/4 cup of freshly grated parmigiano
-1 teaspoon of paprika
-Juice of 1 lemon
Instructions:
1. Preheat oven to 375°F.
2. Place the cauliflower florets on a baking sheet and drizzle with olive oil. Sprinkle with paprika and season with salt and pepper. Roast for 25-30 minutes, until golden and tender.
3. Meanwhile, cook the quinoa according to package instructions.
4. In a small bowl, whisk together the tahini, parmigiano, lemon juice, and a pinch of salt and pepper.
5. Once the cauliflower and quinoa are cooked, combine them in a large bowl. Pour the tahini mixture over the top and toss to combine.
6. Serve warm and enjoy!
