Lemon-Zatar Chicken with Chili Rice
Ingredients:
- 2 cups cooked white rice
2-3 boneless, skinless chicken breasts, cut into cubes
- 2 tablespoons olive oil
- 2 tablespoons zatar
- 1 teaspoon chili pepper
- Juice of 1 lemon
- Salt and pepper to taste
Instructions:
1. Preheat oven to 375°F.
2. In a large bowl, combine the chicken cubes, olive oil, zatar, chili pepper, lemon juice, salt, and pepper. Mix until the chicken is evenly coated.
3. Spread the chicken cubes onto a baking sheet lined with parchment paper.
4. Bake in preheated oven for 20 minutes or until chicken is cooked through and golden brown.
5. Meanwhile, in a medium saucepan, heat the cooked rice over medium heat until warmed through.
6. To serve, divide the rice between four plates and top each with a portion of the cooked chicken. Enjoy!
