Recipe: Lemongrass Ginger Chicken with Rice

Ingredients:
- 4 chicken thighs
- 1/4 cup soy sauce
- 1 cup rice
- 2 stalks lemongrass, chopped
- 1 bell pepper, sliced
- 1 tablespoon ginger, minced

Instructions:
1. Marinate the chicken thighs in soy sauce for at least 30 minutes.
2. Cook the rice according to package instructions.
3. In a large skillet, heat some oil over medium-high heat.
4. Add the marinated chicken thighs and cook until browned on both sides, about 5-7 minutes per side.
5. Add the lemongrass, bell pepper, and ginger to the skillet and sauté for another 3-4 minutes.
