Lemongrass Pork with Tofu and Rice

Ingredients:

-1 lb pork, cut into cubes
-2 tablespoons soy sauce
-2 tablespoons rice vinegar
-2 tablespoons lemongrass, minced
-1 block of firm tofu, cubed
-2 tablespoons coriander, chopped
-1 onion, diced
-2 cloves of garlic, minced
-2 cups of cooked white rice

Instructions:

1. Heat a large skillet over medium-high heat.

2. Add the pork cubes and cook until lightly browned, about 5 minutes.

3. Add the soy sauce, rice vinegar, lemongrass, and coriander. Stir to combine.

4. Add the tofu cubes and cook for an additional 5 minutes.

5. Add the onion and garlic and cook for an additional 3 minutes.

6. Serve over cooked white rice. Enjoy!
