Lemongrass Salmon Rice Bowl
Ingredients:
- 1 cup of uncooked white rice
- 1 egg
- 4 ounces of salmon
- 1 teaspoon of salt
- ½ teaspoon of freshly ground black pepper
- 1 stalk of lemongrass, finely chopped
Instructions:
1. Cook the rice according to package instructions.
2. Meanwhile, in a medium skillet over medium heat, cook the egg until it is set.
3. Season the salmon with salt and pepper.
4. Heat a separate skillet over medium-high heat and add the salmon. Cook for 3-4 minutes per side, or until cooked through.
5. Once the rice is cooked, fluff it with a fork and stir in the lemongrass.
6. To assemble the bowl, divide the rice between two bowls and top with the egg and salmon.
