Lentil and Chicken Rice Bowl

Ingredients:

-1 cup uncooked lentils
-1 cup uncooked white rice
-2 cups chicken broth
-1 lb. boneless, skinless chicken breasts, cut into cubes
-1 onion, diced
-2 cloves garlic, minced
-1 teaspoon cumin
-1 teaspoon paprika
-1 teaspoon oregano
-1 teaspoon salt
-1/2 teaspoon black pepper
-1/2 cup frozen peas
-1/4 cup chopped fresh parsley

Instructions:

1. In a large pot, bring the lentils, rice, and chicken broth to a boil. Reduce the heat to low and simmer, covered, for 20 minutes.

2. Meanwhile, heat a large skillet over medium-high heat. Add the chicken cubes and cook until golden brown, about 5 minutes.

3. Add the onion and garlic to the skillet and cook until the onion is softened, about 5 minutes.

4. Add the cumin, paprika, oregano, salt, and pepper to the skillet and stir to combine.

5. Add the cooked lentils and rice to the skillet and stir to combine.

6. Add the frozen peas and stir to combine.

7. Cook for an additional 5 minutes, or until the peas are heated through.

8. Serve the lentil and chicken rice bowl topped with fresh parsley. Enjoy!
