Lentil and Chicken Stir-Fry

Ingredients:

- 1 cup lentils
- 1 carrot, chopped
- 1 onion, chopped
- 1 teaspoon salt
- 2 eggs
- 2 chicken breasts, cut into cubes
- 2 tablespoons soy sauce

Instructions:

1. Bring a pot of water to a boil and add the lentils. Simmer for 15 minutes, or until the lentils are tender. Drain and set aside.

2. Heat a large skillet over medium-high heat and add the carrot, onion, and salt. Cook for 5 minutes, stirring occasionally.

3. Push the vegetables to one side of the skillet and add the eggs. Scramble the eggs and mix them with the vegetables.

4. Add the chicken cubes to the skillet and cook for 5 minutes, stirring occasionally.

5. Add the cooked lentils to the skillet and stir to combine.

6. Pour the soy sauce over the stir-fry and cook for an additional 5 minutes.

7. Serve hot. Enjoy!
