Lentil and Pea Frittata

Ingredients:

- 2 cups cooked lentils
- 1 cup cooked peas
- 6 eggs
- 1/4 cup tomato sauce
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil

Instructions:

1. Preheat oven to 350°F.

2. In a large bowl, whisk together eggs, tomato sauce, salt, and pepper until combined.

3. Heat olive oil in a large oven-safe skillet over medium-high heat.

4. Add lentils and peas and cook for 2-3 minutes, stirring occasionally.

5. Pour egg mixture into the skillet and stir to combine.

6. Cook for 5-7 minutes, stirring occasionally, until eggs are almost set.

7. Place skillet in preheated oven and bake for 10-15 minutes, or until eggs are completely set.

8. Slice and serve warm. Enjoy!
